Infierno fire cage detail and use

The fire cage feeds the Infierno. To start it you simply build the fire in the cage and light it from the bottom. You may also build a starter fire underneath, then add larger pieces to the cage.

Once lit the cage's chimney characteristics ensure a very hot, very fast fire that reduces whole pieces of wood to cooking-size charcoal in minutes. Once the coals fall to the hearth the chef moves them under the adjustable grill stations.

The top mouth of the fire cage also has an internal lip that allows placement of pans and baskets for quick flame searing.
